Cupcake decorating classes.

I have taught two classes at The Make Lounge now and have been inspired by the lovely people I have met at both. It is fantastic to see the variety of designs and ideas and to see such enthusiasm for baking and for learning a new skill. The classes cover the basics of  the Lavender Bakery style, the way  nearly all of  the orders are decorated – frosting with Italian meringue buttercream and piping with royal icing – including how to roll a disposable piping bag, design, recipes, mixing colours and techniques for achieving simple and effective decorations. No special equipment is needed (although a palette knife is super useful!) and you can create beautiful cupcakes, biscuits and cakes using these simple tools. The most important qualification for decorating cupcakes is lots of practice. The occasional person gets it straight away but for the most part, you have to try a few times and then your hands will remember what to do!

Thank you to all of you who have given such great feedback, I am learning more with each class and I look forward to meeting those of you booked in for the next three.

Christmas cookies.

It is that time of year again. I can’t seem to make enough of these – they can be threaded with ribbon for hanging on the tree or boxed up and given as gifts. As with all Lavender Bakery products they are baked and decorated to order – so have the names of family members piped on them or ask for them in your favourite colour.

Happy 1st Birthday Unpackaged.

A special cake (chocolate with vanilla buttercream) to celebrate Unpackaged reaching it’s 1st Birthday – the lovely Cath has created an amazing shop full of wonderful products – and it is good for the environment. Covent Garden Night Market. 21 August 2008. And some other cakes baked in between market stalls…

Everyone has been very sweet about my cakes and I am encouraged by all the kind words I have had in the past week (Thank you to Trusted Places, Living to Eat, A Slice of Cherry Pie, Eat Like a Girl and I Heart Cupcakes). My second time round at the market I was slightly more prepared – and as it was a Thursday it was a bit more relaxed – especially as I was helped by Gemma, her lovely husband Jamie (the amazing creator of my website) and Victor (who is always wonderful) so I got to wander a little bit – and chat with Choc Star and eat white chocolate and chilli ice cream.

The chocolate mud cake was hugely popular – and it seems I can’t make enough mini cupcakes to last the night. I was then up with the sun on Friday morning to bake 48 cupcakes and a birthday cake for Monique – to go with the 60 biscuits (Shaped like Bichon frise dogs, hairdryers, scissors and the number 21) And mid-week 70 butterfly cakes – without paper cases – for a TV ad for the Daily Mirror.

Organic biscuits for Unpackaged

A selection of organic biscuits made for Unpackaged, a fantastic business in Amwell street in Islington where you can go with your own containers to buy nuts, rice lentils, chocolate drops, olive oil and many other lovely products. It is in the old Lloyds dairy and they now do organic milk in glass bottles. Such a great idea – I know I am not alone in disliking the amount of packaging that comes with buying food. If you are local, check it out.
